Recipe: Filipino Pandesal (salt bread)

In my youth I would be woken at approximately 5:00 a.m. either by the Rooster or by the neighborhood boy loudly pitching his fresh, locally-made (Manalo Bakery) bread rolls through our neck of the woods. 

"Pandesal --- Manalo!!" 

 My Dad was also up and invariably purchased a dozen or so. We had no oven of our own so we had to buy them from the town bakery via their sales boy.  I could barely stay in my bed another minute.  I was excited to start my day with these hot-from-the-oven goodies dipped in my "coffee" or slathered with a favorite jelly. Life was simple and so good!

PANDESAL (recipe by A.P.M.)

2 eggs
1 cup water (lukewarm) or warm 2% regular milk
1/2 cup sugar
1/4 cup vegetable or corn oil
1/2 tsp salt
4 cups Gold Medal bread flour
1 packet yeast


Put all the ingredients in the order above into the breadmaker pan
Use the "dough" cycle until done.
Take the dough out and form into round  shapes, 

or cut them into little rectangles. Makes about 25-30 pieces.
Brush with oil and roll them into regular bread crumbs and arrange in a bread pan. 
 Let rise until they are double in size.  
Bake for 10-15 mins or until light brown at 350 degrees

Bathroom Renovation: Hexagon Floor Tiles for Guest Bathroom

What's old is new again!

We installed good ol' hexagonal-shaped tiles on the floor of each of our bathrooms during our renovation.

Here was how our Guest Bath shower floor was done by contractor Andy, and his trusty Assistant, Luke.

Honor Cabin @ Summer Camp in Wisconsin

To be bestowed the  Honor Cabin  award meant a cabin (and the Campers who reside therein) got the most points for being the cleanest/most organized cabin during the entire week of camp...along with possessing other sterling qualities.  They were judged on a daily basis by two, qualified, impartial judges --- the Camp nurses.

Congrats to Cabin Number 11 -- AJ's cabin!  The other boys were Nathanael, Micah, Chase, Noah, Christian, John, Clayton, and Luke.  Their counselor was Terence Jackson (in white cap).
 Note that 3 of the 9 boys are from our Chapel in Elgin. *Ahem*

Infant Eczema

Throwing a hissy fit, waaaahhh!!!!

When I feel down, as I sometimes do, I remember the Lord's work of old --- His faithfulness in times past. The bottom pictures reveal FJE's fiery personality. Remembering through these pictures make me smile, yet promotes tearfulness on my part. What a wringer her eczema skin problem put us through! And it was all on her lovely face! (AJ had a similar problem, which lasted even longer). But the Lord healed her skin. He was with us and His grace was sufficient. Life went on.
Today, we have much cause to be thankful, including our children's beautiful smiles and clear skin. The eczema experience causes me to say "Amen" to the following verses found in the Bible --

When thou passest through the waters, 
I will be with thee;
and through the rivers,
 they shall not overflow thee:
when thou walkest through the fire, 
thou shalt not be burned;
neither shall the flame kindle upon thee.
For I am the LORD thy God,
the Holy One of Israel, thy Saviour

Isaiah 43:2,3
